Understanding Black Pepper Grades: MG1, 500 GL, and 550 GL
What the grading codes on a pepper invoice actually mean, and why they matter more than the price per kilo.
Black pepper is graded mainly by density, measured as grams per litre, and by how clean the lot is of light berries, stalks, and foreign matter. Two lots at the same price per kilo can be very different products once you look past the number.
Density grades
- 500 GL — the common export-grade benchmark for bulk black pepper. Dense, well-filled berries.
- 550 GL — a step up, prized for oil content and used in premium retail packs and grinding.
- MG1 (Malabar Garbled 1) — hand- or machine-cleaned to remove light berries and extraneous matter, the standard for spice-grade export lots.
Why density matters
Higher GL pepper has less air and husk per berry, which means more actual pepper — and more piperine and essential oil — per kilo. For a wholesale buyer grinding or blending, that difference shows up directly in flavour strength and yield.
